Veggie Tacos
Choose whatever veggies you like. I recommend all or any of the following: zucchini, squash, mushrooms,spinach, colorful bell peppers(yellow, orange and red)
Saute garlic and purple or yellow onion in a little bit of Olive Oil…A LITTLE bit!
Add veggies and sprinkle with a drizzle of olive oil, sea salt,paprika,cumin,parsley,cayenne pepper, red pepper, black and white pepper,onion powder, garlic powder, and chili powder .
saute ’til desired tenderness
Serve on corn, flour or hard shells with either fat free re-fried beans or whole beans. You can use pinto or black. I like La Sierra Fat Free Black Beans.
Corn tortilla’s are the healthy choice~ they are low in fat, calories and carbs. If you are going to use flour, try wheat flour tortilla’s.
This meal is so easy to make and very tasty. We eat it quite often!
