ive been experimenting with some vegan recipes. i sprouted my own lentils. Its really easy. You put some dry lentils in a jar, fill it with water and leave it overnight (about 12hrs) then once you pour out the water, you cover the lid of the jar with cloth (i used a piece of an old tshirt cut into a square and a rubber band from a bunch of broccoli) you just rinse the lentils once a day and dump the water out each time. put the jar on your counter top out of direct sunlight, and after 4 days, AWESOME bean sprouts for your english muffin/eggwhite sandwiches in the morning ! raw lentils that are sprouted are super good for you, and add a sweet/nutty taste to any sandwich or salad!
