paleo approved-Coconut Chicken Curry
I made this yummy dish last night for dinner:
Ingredients to serve two people:
Two- four Boneless skinless chicken breast
One can of lite coconut milk, I like Nuoc Cot Dua Brand in a brown can. It can be found at the Hong Kong Market
1/2 of the coconut milk can of water
1 tsp. unrefined coconut oil
Season to taste with:
Yellow curry powder
crushed red pepper
sea salt
cayenne pepper
black pepper
white pepper
paprika
garlic and onion powder
ginger powder
turmeric
Directions:
Pre-heat oven to 400
combine all seasonings and oil with coconut milk and water in a pot with a lid that can be put in the oven
add raw chicken
bake in oven for about two hours
serve overĀ brown rice with broccoli and cauliflower. I actually steamedĀ the veggies separately and added them to my bowl, they were delicious in the curry sauce!
