Grilled Portabello Mushrooms

Ingredients

  • 2 whole portobello mushrooms
  • ½ whole small onion, diced
  • 1 whole garlic cloves, minced
  • 1 cup beef, chicken or veggie broth
  • 3 tbsp balsamic vinegar
  • 1 tbsp mirin or sherry 
  • 1 tsp thyme
  • 1 tsp chives (optional)
  • ½ tsp basil

Instructions

Coat a large frying pan with a thin layer of broth. Remove stems from mushroom and set aside. Add onion and garlic and cook for 2 minutes over high heat. Add remaining ingredients, except for the mushrooms, and turn to medium. Add mushrooms, cover and cook for five minutes. Gently flip mushrooms over and cook for 5 minutes more, adding more broth as needed to prevent sticking or burning. Plate mushrooms and spoon leftover juices on top.

EZ Bake Cajun Drumsticks

Ingredients:

Skin on drumsticks

Tony Chachere’s Seasoning

Directions:

Preheat oven to  425

Line a cookie sheet with foil, place drumsticks on cookie sheet, sprinkle with Tony’s

Bake for about 60 minutes

Sesame Lime Baked Cod

Ingredients:

Kirkland Wild Caught Alaskan Cod Filet’s (I usually cook 6 at a time)

1/4 bottle Drew’s Sesame Lime Dressing

Garlic and Onion Powder

Red Pepper Flakes

Cayenne Pepper

a pinch of sea salt

Directions:

Marinade all ingredients over night in refrigerator

Preheat oven to 400

cook on middle rack for about 12 minutes

How to make Greek Yogurt less tangy

This is a great way to cut the bitter/tangy taste that so many of you complain about in plain Greek yogurt 🙂

Add any of the following, in any combination, to  full fat plain Greek Yogurt for a yummy treat or for  breakfast

Flavorings:

Vanilla, Coconut, Almond, Banana

Shredded fresh Coconut

One of the following: Stevia Powder/LoHan/Splenda/Xyla/Coconut Crystals

Cinnamon Powder

Pumpkin Pie Spice

Cacao Powder

Sugar free jelly ( Smuckers makes a good one)

Sweet and Spicy Rainbow Slaw

Ingredients:

One bag of Rainbow Slaw

Chopped red, yellow or orange bell pepper

Two tablespoons raw sunflower seeds

Half of a medium sized cucumber, chopped

Organic Cherry Tomatoes

A sprinkle of Cayenne Pepper

Four Tablespoons Bolthouse Salsa Ranch Dressing

Directions:

Mix all ingredients, sprinkle with cayenne pepper and  ENJOY!

Daikon and Hummus Snack

Ingredients:

Asian Daikon

Your favorite hummus

This is a very simple and delicious snack. Daikon is an Asian radish, it’s sweet, spicy and crispy. Wash and slice the daikon into “chips” and dip in the  hummus!

Paleo Pumpkin Pie Spiced “Milk”

Ingredients:

8oz. Unsweetened Almond or Coconut Milk

One tablespoon Pumpkin Pie Spice

One Teaspoon Cinnamon Powder

Two scoop Now Organic Stevia Powder

One teaspoon vanilla flavor

Crushed Ice

Directions:

Combine all ingredients in shaker and and shake ’til blended

Paleo Cacao “Milk”

Ingredients:

Two Tablespoons Organic Cacao Powder

One tablespoon vanilla  extract

Two-four  scoops of  NOW Organic Stevia

dash of sea salt

One Teaspoon of cinnamon powder

2 tablespoons Great Lakes Collagen Hydrolysate ( in the green bottle) http://www.greatlakesgelatin.com/consumer/index.php

Directions:

Combine all ingredients in a shaker and shake ’til blended or for a creamy smoothie, blend in a blender.

Breakfast Stir Fry

Ingredients:

Applegate Farms Organic Turkey Sausage (6)

Spiracha Brussel Sprouts and Green Beans

fresh mushrooms (chopped)

half of a white onion

one whole avocado

Spectrum Grape Seed Oil Spray

Directions:

either prepare or used leftover Sriracha Brussel Sprouts/Green beans (i only make this dish when I have these leftovers) 🙂 http://perceptionfitness.com/archives/category/recipes

Spray non stick pan with oil and heat on medium/high for 1-2 minutes

chop mushrooms, veggies, onion, turkey sausage

throw all ingredients except the avocado into the pan and stir fry til everything is browned

half the avocado and divide it between two people (this dish usually serves two people)

Spiracha Brussel Sprouts/ Green Beans

Ingredients:

Fresh Brussel Sprouts and/or Green Beans

Spiracha Hot Chili Sauce

Worcestershire Sauce

Bragg’s Amino Acids

Turmeric Powder

Coarsely  ground black pepper

Directions:

Preheat oven to 500

line a cookie sheet in foil

In a ziploc bag, combine all ingredients and shake all  around ’til all pieces are coated

throw all ingredients on cookie sheet

roast on bottom shelf of  oven ’til browned (in my oven it takes exactly 25 minutes, yours may not take that long)
