Paleo Approved- Cacao Milk

There are many variations on this recipe:

  • Choose 8oz. of your “milk”
  • Hemp, Rice, Almond, Coconut, Flax, Cow’s, Goat
  • Add 2  tablespoon Nativa’s Organic Cacao Powder
  • Options ( if blending) 1 tablespoon Flax Seed, Hemp Seed, Chia Seed, nut butter, greens,  or fruits.
  • If you opt out of fruit, you may want to choose a sweetener: Stevia, Xylitol, or Lo han
  • Two Tablespoons Great Lakes Collagen Hydrolysate
  • Other options: cinnamon, turmeric, sea salt, protein powder
  • add ice and either blend or shake
  • 86 the ice and heat to enjoy this hot

Paleo Approved-Egg White Scramble

I like to use  Kirkland brand egg whites from Costco

1 whole egg

diced onion

a handful of spinach or any other green veggies, mushrooms, onions, peppers or all of the above

Spectrum Coconut Oil Spray

Tony Chachere’s Lite seasoning

Combine all ingredients in a heated pan (if using onions/peppers/mushrooms, I   saute’ for a few minutes first) then  scramble on med/high heat for about 5 minutes or until eggs are cooked. I like to top with a few slices of avocado and salsa.

Paleo Approved- Easy Roasted Veggies

my favorites are: cauliflower, broccoli, asparagus, brussel sprouts, butternut squash, acorn squash, zucchini, and  long beans

Pre-heat the oven to 500 degrees. Chop up your favorite veggies and place them on a cookie sheet lined with foil or parchment paper (for easy clean-up.)  Drizzle with ghee( unless you don’t tolerate dairy), avocado oil, or coconut oil. My new favorite is the Spectrum Coconut Oil Spray. Then, sprinkle with your favorite seasonings.  I like Low Sodium Tony Chachere’s Creole Seasoning but salt and pepper are simple and tasty. Cook on the bottom shelf of the oven for 20-30 minutes depending on how crispy you want them.  I like mine almost burned 😉

I’m tellin’ you this way of cooking veggies is the best I’ve ever had.  If you have not been a big fan of veggies in the past, especially brussel sprouts, please try this method and re-evaluate.

paleo approved-Smothered Chicken with Green Chile Enchilada Sauce

Smothered Chicken

One 16oz. can of HATCH Green Chile Enchilada Sauce

One and a half cans of water

One 16oz can of HEB No Salt Added Diced Tomatoes

One small can of Hatch Green Chiles

Four organic boneless skinless chicken breast

Season to taste with:

Paprika, garlic and onion powder, crushed red pepper, black pepper, white pepper, cayenne pepper, basil, sea salt, Comino, and Chile powder

Cook all day on low in a crock pot or on 300 in the oven for about three hours.

paleo approved-Coconut Chicken Curry

I made this yummy dish last night for dinner:

Ingredients to serve two people:

Two- four Boneless skinless chicken breast

One can of lite coconut milk, I like Nuoc Cot Dua Brand in a brown can. It can be found at the Hong Kong Market

1/2 of the coconut milk can of water

1 tsp. unrefined coconut oil

Season to taste with:

Yellow curry powder

crushed red pepper

sea salt

cayenne pepper

black pepper

white pepper

paprika

garlic and onion powder

ginger powder

turmeric

Directions:

Pre-heat oven to 400

combine all seasonings and oil with coconut milk and water in a pot with a lid that can be put in the oven

add raw chicken

bake in oven for about two hours

serve over  brown rice with broccoli and cauliflower. I actually steamed  the veggies separately and added them to my bowl, they were delicious in the curry sauce!

I went to spinn aerobics this morning at 5:30am at Gold’s!! It was hard to get out of bed in the cold, but well worth it after my workout.  I feel great!

I have been using a web site called My Fitness Pal to track my food.  I really like it, it adds up all your calories  and it’s pretty easy to use. You can even add your exercise for the day and it adjust your calorie intake accordingly.
