paleo approved-Smothered Chicken with Green Chile Enchilada Sauce

Smothered Chicken

One 16oz. can of HATCH Green Chile Enchilada Sauce

One and a half cans of water

One 16oz can of HEB No Salt Added Diced Tomatoes

One small can of Hatch Green Chiles

Four organic boneless skinless chicken breast

Season to taste with:

Paprika, garlic and onion powder, crushed red pepper, black pepper, white pepper, cayenne pepper, basil, sea salt, Comino, and Chile powder

Cook all day on low in a crock pot or on 300 in the oven for about three hours.

paleo approved-Coconut Chicken Curry

I made this yummy dish last night for dinner:

Ingredients to serve two people:

Two- four Boneless skinless chicken breast

One can of lite coconut milk, I like Nuoc Cot Dua Brand in a brown can. It can be found at the Hong Kong Market

1/2 of the coconut milk can of water

1 tsp. unrefined coconut oil

Season to taste with:

Yellow curry powder

crushed red pepper

sea salt

cayenne pepper

black pepper

white pepper

paprika

garlic and onion powder

ginger powder

turmeric

Directions:

Pre-heat oven to 400

combine all seasonings and oil with coconut milk and water in a pot with a lid that can be put in the oven

add raw chicken

bake in oven for about two hours

serve over  brown rice with broccoli and cauliflower. I actually steamed  the veggies separately and added them to my bowl, they were delicious in the curry sauce!

Paleo approved- Ground Bison/Turkey/Longhorn/Beef

1 pound ground Bison/longhorn

half can of Hatch Green Chile Enchilada sauce

can of no salt added diced tomatoes

half onion

one whole  bell pepper

tablespoon of chopped garlic

black pepper/white pepper

red pepper flakes

sea salt

paprika

cayenne pepper

garlic powder/onion powder

tablespoon of Extra Virgin Olive Oil

and anything else paleo approved that you think would be yummy.

Saute onion, garlic and bell pepper in olive oil  ’til onion is translucent.

Bring to a boil, cover and simmer for 30 minutes

Top with some pico de gallo over a bed of greens and it’s on!

Baked Sweet Potato

Large sweet potato baked in oven at 425 degrees for about 1 hour or until soft in the middle.  You can eat after it cools a little or you can put in the fridge and save for another time.  They usually stay good for a couple of days in the fridge for  easy and quick  eating.

I like to top them with cinnamon, honey, black pepper and red pepper with a little bit of sea salt

They are also pretty delicious plain right  outta the oven!

Paleo Approved Baked Jerk Mahi Mahi

I buy  frozen Mahi Mahi at Costco. It’s really easy to prepare and doesn’t take long at all.  I fill one side of my sink up with cold water to thaw.  This takes about 15 minutes or so.  You can season Mahi Mahi  many  different ways but I find it’s really good with Jerk seasonings. I buy my Jerk seasoning at HEB in the bulk section.   Throw the fish in a pan and  drizzle with a little bit of Olive Oil and then sprinkle liberally with the Jerk seasoning.  Bake on 450 degrees  for about 10 minutes or until fish is easily sliced with a  fork. Do not over cook.

This is good served with Basmati or coconut  rice and  black beans. I like to add a little bit of HEB’s Mango Pico De Gallo to my black beans for this dish. If you are feeling really creative you can stir fry  pineapple chunks in a tiny bit of olive oil, red pepper flakes and sea salt.  Add a pinch of cilantro in the mix at the end and stir fry til wilted  then  top the fish with the  pineapple mixture!

Veggie Tacos

Choose whatever veggies you like.  I recommend all or any of the following: zucchini, squash, mushrooms,spinach, colorful bell peppers(yellow, orange and red)

Saute garlic and purple or yellow  onion in a little bit of Olive Oil…A LITTLE bit!

Add veggies and sprinkle with a drizzle of  olive oil,  sea salt,paprika,cumin,parsley,cayenne pepper, red pepper, black and white pepper,onion powder, garlic powder, and chili powder  .

saute ’til desired tenderness

Serve on corn, flour or hard shells  with either fat free re-fried beans or whole beans.  You can use pinto or black.  I like La Sierra Fat Free Black Beans.

Corn tortilla’s are the healthy choice~ they are low in fat, calories and carbs. If you are going to use flour, try wheat flour tortilla’s.

This meal is so easy to make and very tasty.  We eat it quite often!
